Ingredients & Cultures
Cheese, yoghurt, kefir and sourdough all run on the same trick. You put the right bacteria into good milk or flour and then get out of the way. The culture decides the flavour, the texture and how long the thing keeps, so choosing the right sachet does most of the work for you.
Rennet comes first for cheese. Mad Millie Vegetarian Rennet 50 ml is the easy liquid option, the Vegetarian Rennet Tablets keep better if you only make cheese now and then, and Green Living Rennet Liquid 50 ml has a dropper cap for small batches. Pair it with Mad Millie Calcium Chloride 50ml when you are working with shop bought milk, which needs the calcium put back. For cultures, Cheese Culture #2 Mesophilic and the Aromatic Mesophilic Fresh Cheese Culture cover most soft and semi hard styles, and the Blue Mould Culture Blend is there when you feel brave. Beyond cheese there is Mad Millie Yoghurt Culture, GL Yoghurt Mild Culture made by Sacco in Italy, Kefir Culture and the Kefir Starter Kit, Vegetable Culture for krauts, and a Sourdough Yeast Culture.
Keep your sachets in the freezer, not the pantry. Cultures are live and heat is what tires them out, so a frozen sachet opened a year later usually still performs.

Not all rennets are made from calves' meat. There is now a vegetarian option too. Vegetarian rennet serves the same purpose as "regular" rennet, to coagulate proteins in milk to make vegetarian cheeses. The difference is that vegetarian rennet is vegetable or microbial in origin. This is a coagulant made from a selected strain of the fungus Rhizomucor miehei. It is widely used in the commercial cheese making industry to coagulate the milk for cheese and junket making. It contains no animal tissue and is therefore particularly good if you would like to make vegetarian cheeses. This rennet is G.E Free.
- Strength = 240 IMCU/mL
- Use between 0.2 and 0.5 ml per litre of milk
- Dilute product in un-chlorinated water before adding to milk
- Store in the refrigerator
$16.90 AUD
This Merlot mother of vinegar is a thin film of slimy, gelatinous bacteria that encourages fermentation.
If you’ve bought a bottle of raw apple cider vinegar, you’ve probably seen a leftover mother floating in the bottom of the jar. This bacteria has the more scientific name of mycoderma aceti but calling it a mother is so much more poetic.
The magical thing about mothers is that during the fermentation process they give “birth” to other mothers that can be used in future batches of vinegar. People who regularly make their own vinegar can use new generations of one mother to make vinegar for decades.
Other than a mixture of wine, water and a mother, the only other supplies you’ll need are a 1-2 gallon vessel to ferment the vinegar and some cheesecloth. A ceramic crock works well because it keeps out damaging light, but a jar wrapped with cloth or paper to keep out the light could work, too. Covering the top of the vessel with cheesecloth keeps insects out, but lets air get in to feed the bacteria. Tucked away in a warm, dark place, the magical transformation into tasty red wine vinegar will begin. Months later, you’ll be rewarded and we think you’ll agree, it’s worth the wait.
$7.90 AUD
The Mad Millie Vegetarian rennet is a microbial rennet used to coagulate milk when making cheese. Though available as a liquid, the tablet is a more convenient solution. The green living yoghurt maker is a fantastic appliance that will enable you to make delicious batches of yoghurt, no matter how large or small, with perfect accuracy, even over extended fermentation times.
Features:
- Easy to use: just fill with your ingredients, plug it in and wait for your beautiful yoghurt to ferment.
- Works with cows milk, goats milk, soy milk and even coconut cream.
- Suitable for extended fermentation times of 24 hours or more.
- Maintains the temperature very accurately between 39 and 43° C.
How it Works:
The electric yoghurt maker will help keep your milk at the right temperature for natural fermentation to occur. All you need to do is add your dairy or non-dairy milk (or coconut cream) to the inner container, add your culture, and switch it on. Then wait the required amount of time as per the instructions included with your culture. Once it's finished, pop the container in the fridge and chill before enjoying with your favourite dish.
Details:
- The yoghurt maker stands 265 mm high, with a diameter of 190 mm.
- Comes with a high quality BPA free food grade 2 litre fermentation pot.
- Yoghurt makers should run between 37 to 43° C and should not creep up in temperature, even over extended fermentation times. Please note that yoghurt makers are designed to maintain heat and not to heat your milk up to fermentation temperature.
- Please Note: Your dairy milk will need heat treating to 90° C, to help break down or unravel some of the dairy proteins and help make a thicker yoghurt. Long Life, or UHT milk has already been heat treated so just needs warming to around 40° C before being put into the yoghurt maker and adding the culture.
$25.10 AUD
