Arrosticini & CUBO Kits

Arrosticini are the little lamb skewers of Abruzzo, cut small, threaded tight and cooked fast over coals in a narrow trough so the fat renders without the meat drying out. It is a social way to cook. Someone stands at the grill turning skewers, everyone else stands around with a glass, and the food comes off in rounds rather than all at once.

We have put the gear together as kits so you are not hunting for pieces. The Complete Arrosticini Maker Kit is the traditional path, giving you what you need to cut, skewer and grill in one go. The CUBO Complete Kit works from a cube of meat pressed and sliced through, which is the quicker method when you are feeding a crowd and want every skewer the same size. Pick the CUBO if volume and consistency matter to you, and the maker kit if you like doing it the older way.

A tip from the counter. Cut your lamb with a decent amount of fat left on and keep the cubes small and even, roughly the size of the end of your thumb. Even cubes cook at the same rate, and the fat is what keeps them tender over hot coals.
