Liquid Smoke and Spices

Not everyone has a smoker, and even people who do sometimes want a smoky note in something that is never going near a fire. That is where liquid smoke earns its keep. A few drops through a marinade, a brine or a batch of sausage mix gives you the aroma of wood without a six hour cook, and you decide exactly how much smoke goes in rather than hoping the weather plays along.

The range here is Misty Gully, and the choice is really about which wood you are after. Hickory Essence is the classic bacon and ribs direction, big and a bit sweet. Apple Wood Essence is lighter and works nicely with pork and poultry where you do not want the smoke taking over the plate. Mesquite Essence is the strongest of the four, the flavour people associate with Texas barbecue. Outback Camp Fire Wood is the local one, rounder and closer to a hardwood fire in the backyard.

The tip we give everyone. Start with less than you think you need. Liquid smoke is concentrated, and it is far easier to add another few drops to a mix than to rescue a batch you have overdone. Stir it through your liquid first so it spreads evenly instead of pooling.
