Chestnut Roasting

Roasting chestnuts is one of those autumn jobs that is genuinely simple, as long as you have a pan with holes in it and something to score the shells with. Without the holes the nuts steam instead of roast. Without a proper cut they burst. That is more or less the whole category.

For pans, the Chestnut Roasting Pan Padella with Wood Handle is the traditional Italian shape and the long handle keeps your knuckles out of the fire. The Copper Chestnut Roasting Pan 27cm is the one people buy to keep, and copper moves heat quickly and evenly. The Stainless Steel Chestnut Pan 29 cm with a perforated base is the practical everyday choice and the easiest to clean. There is also a plain Italian metal chestnut pan if you want something to knock about outdoors.

For scoring, the Chestnut Cutter by Snips and the hand held Italian slitter both do the job quickly. Anyone who has tried a paring knife on a bucket of chestnuts will understand why these exist.

Score a cross on the flat side, not the round side, and shake the pan often so they colour on every face. Peel them while they are still hot, because the skin lifts away cleanly then and fights you once it cools.

Find them at Laverton North and Epping, or browse gas burners, kitchen equipment and tools and food preparation.
