Green Living
Green Living make cheese and yoghurt cultures and the small kits that get people started with them. It is the brand we reach for when someone walks in and says they want to make mozzarella this weekend and have never done it before.
The kits cover the obvious first steps. The 30 Minute Mozzarella and Ricotta Kit is the classic, and there is a Soft Cheese Making Kit and a Fresh Cheese Kit for feta. For yoghurt there is a proper spread of cultures: a mild culture from Sacco in Italy, a tangy culture, a smoothing gel culture, a culture for electric yoghurt makers and a non dairy culture with probiotics. Kefir is covered by the maintenance free culture rated to 100 litres. For coagulation there is liquid rennet in a 50ml bottle with a dropper cap and vegetable rennet as ten high strength tablets, each good for 50 litres, plus lipase powder in a 20 gram sterile jar for that sharper Italian character. Beyond dairy, Green Living also do beeswax granules in a 250g pouch and pine resin in 100g for making your own beeswax wraps. There is also Valerie Pearson's book, Cheese Making in Australia, now in its second edition.
The tip: buy the rennet in the size you will actually use. Fresh rennet works properly and old rennet gives you a lazy curd.

How Does It Work?
Making Soft Cheese is fun and easy. Most soft cheeses are made with these simple steps:
- Milk is warmed.
- Cheesemaking ingredients are added.
- The milk coagulates into a single curd.
- The curd is placed into a cheesecloth and hung to drain off the whey.
- The curd is sometimes pressed to remove more whey, with salting taking place before or after this process.
- The cheese is refrigerated and is often ready to be eaten immediately.

Room temperature - Weeks
Refrigerator - Months
Freezer - Years
What Qualifies As A Soft Cheese?
Fresh, unripened, soft cheeses are simple to make and most can be stored in a fridge for up to 5 to 7 days. As these cheeses do not ripen, they are very mild and refreshing. These cheeses are also called 'soft curd cheeses' as a clean break is not required.
These cheeses make wonderful dips and spreads and go well with salads and fresh fruits. Soft cheeses can be used in cooking, both main dishes and desserts.
How Do You Dose Cheese Culture For Domestic Use?
We are often asked, "if my culture pack is enough for 100 litres, how do I work out how much to use for four or eight litres"? We supply sterile jars with the culture so that you can see how much culture you have available to inoculate 100 litres of milk. Estimating by eye is acceptable as this is a living culture that will soon grow, and too much can't hurt.

The green living yoghurt maker is a fantastic appliance that will enable you to make delicious batches of yoghurt, no matter how large or small, with perfect accuracy, even over extended fermentation times.
Features:
- Easy to use: just fill with your ingredients, plug it in and wait for your beautiful yoghurt to ferment.
- Works with cows milk, goats milk, soy milk and even coconut cream.
- Suitable for extended fermentation times of 24 hours or more.
- Maintains the temperature very accurately between 39 and 43° C.
How it Works:
The electric yoghurt maker will help keep your milk at the right temperature for natural fermentation to occur. All you need to do is add your dairy or non-dairy milk (or coconut cream) to the inner container, add your culture, and switch it on. Then wait the required amount of time as per the instructions included with your culture. Once it's finished, pop the container in the fridge and chill before enjoying with your favourite dish.
Details:
- The yoghurt maker stands 265 mm high, with a diameter of 190 mm.
- Comes with a high quality BPA free food grade 2 litre fermentation pot.
- Yoghurt makers should run between 37 to 43° C and should not creep up in temperature, even over extended fermentation times. Please note that yoghurt makers are designed to maintain heat and not to heat your milk up to fermentation temperature.
- Please Note: Your dairy milk will need heat treating to 90° C, to help break down or unravel some of the dairy proteins and help make a thicker yoghurt. Long Life, or UHT milk has already been heat treated so just needs warming to around 40° C before being put into the yoghurt maker and adding the culture.
