Vacuum Sealers for Food

Air is what turns good meat grey and gives frozen mince that flat, cardboard taste. Taking the air out before food goes into the fridge or freezer keeps it fresher for longer, and it is the first step for sous vide and for ageing your own steak at home.

For home kitchens, start with a bar sealer. The open end of the bag goes under the lid, the machine draws the air out and the bar seals it. The Incasa 110 W and the SICO S250 Basic from Italy are simple, reliable starting points, and the SICO S250 Premium SV adds a double sealing bar and automatic mode for weekly portioning.

For butchers, delis, cafés and hunters, a commercial vacuum sealer has a longer bar and a stronger pump. The SICO S300 has a 320 mm triple sealing bar, and the S350CR, S460CR and S550CR step up to 350, 460 and 550 mm bars in AISI 304 steel, made in Italy. The EquipPro T-Matic, TPRO50 and TPRO80 are brushed stainless steel, and the TPRO80GAS adds inert gas flushing for delicate products like fresh pasta.

Sealing soups and liquids? A chamber vacuum sealer puts the whole bag inside the machine, so liquids seal cleanly. We carry the Pro-line VS-CHD3, the Pro-line commercial liquid sealer and the BuddyVac 400 chamber machine, so ask us about stock. With a bar sealer, freeze liquids flat in the bag before you seal them.

Leave 3 to 4 cm of empty bag above the food so the seal sets properly. Our Italian vacuum bags and rolls come in widths from 10 to 50 cm, and SICO machines also vacuum our vacuum seal containers and jar lids. Spare parts, seals and teflon strips are in vacuum sealer accessories. See the machines at Laverton North and Epping.

Frequently asked questions

Bar sealer or chamber sealer: what is the difference?

A bar sealer is what most homes use. The open end of the bag goes under the lid, the machine draws the air out and the bar seals it, so the bag stays outside the machine. A chamber sealer puts the whole bag inside a closed chamber, which lets it seal liquids and is built for heavier commercial use. Bar sealers are smaller and cost far less.

Can a vacuum sealer seal soups and liquids?

A chamber sealer can, because the whole bag sits inside the machine. With a bar sealer, freeze soups, stocks and sauces flat in the bag first and seal them once they are solid, or use the manual seal button to seal before liquid creeps up to the seal line. Leave 3 to 4 cm of empty bag above the food either way.

Which vacuum sealer should I buy for home?

If you seal now and then, the Incasa 110 W or the SICO S250 Basic will do the job. If you portion meat, game or fish every week, the SICO S250 Premium SV adds a double sealing bar and automatic mode. Come and see them at Laverton North or Epping.

What makes a vacuum sealer commercial?

A longer sealing bar so you can seal wide bags or several bags at once, a stronger pump, and a body built for daily use. The SICO S350CR, S460CR and S550CR have 350 to 550 mm sealing bars and AISI 304 steel bodies, and the EquipPro TPRO50 and TPRO80 have 40 litre per minute pumps. The TPRO80GAS also flushes the bag with inert gas, for delicate products like fresh pasta.

Can I vacuum seal containers and jars?

Yes. Connect the SICO handle attachment to the hose on a SICO machine, set it to jars, and hold the nozzle on the valve of a SICO lid. See our vacuum seal containers and jar lids.
