If you are starting from nothing, a kit saves you working out which pieces you actually need. These are the sets we put together for people making pasta at home for the first time, and for anyone buying a present for someone who has been talking about it.
The Panetta Casalinghi four piece is the starter basics: the essential tools and nothing you will not use. The five piece dough, roll and dry set adds what you need to take a batch all the way from mixing through to drying, which is the step first timers usually forget to plan for.
What we would tell you if you rang. You need three things to make pasta: something to roll it, something to cut it, and somewhere to hang it. A kit covers all three. Add a machine later if you decide you want sheets faster and more even than a pin will give you.
Flour and eggs are the cheap part. Getting the dough right takes a couple of goes and nothing you buy will shortcut it, so start with a small batch and expect the second attempt to be better than the first.
