Wine looks after itself right up until it does not. Oxygen browns it, wild yeast restarts a ferment you thought had finished, and a batch that tasted lovely in March turns dull by winter. This is the shelf you come to for the small additions that hold a wine steady from ferment through to bottling.

Sulphur is the workhorse. Potassium metabisulphite is the usual choice, and we carry it as Enartis powder, the Winy Italy E224 pack, a vintage pack for bigger jobs and 66 percent effervescent tablets if you would rather dose by the tablet than the gram. Campden tablets from Handcraft Supplies do the same job in the simplest form for small batches, and Sodium Metabisulphite E223 from Esseco is there for sanitising duty. To stop a sweetened wine refermenting in the bottle, potassium sorbate E202 and Esseco Sorbosol K are what you want, used alongside sulphur rather than instead of it. Potassium bicarbonate pulls back a wine that is too sharp, and Enartis Citrogum helps with stability before bottling.

A tip from behind the counter: metabisulphite loses strength once the bag has been opened and breathed. Buy the size you will actually get through in a season, keep it sealed and dry, and do not trust a jar that has been rattling around the shed for three years.
