Oak and tannin do different jobs that people often confuse. Oak adds flavour and a bit of structure over time. Added tannin is more about grip, colour stability and mouthfeel, and it works from the first days of ferment.
If you are chasing oak character without a barrel, the format decides the speed. American oak powder chips give the fastest pickup and the least subtlety. French and American oak chips and staves sit in the middle and are easy to pull once you have what you want, especially in the nylon infusion bag. Tank planks in French oak with medium toasting, and French oak long block inserts where you select the toast level, work slowly and read much more like a barrel. If you would rather do it properly, there is an Oak Hungarian spirit and wine barrel.
On tannins, Enartis covers most of it. Tannin Blanc and Tannin Elegance are aimed at whites and cider. EnartisTan Superoak and EnartisTan CDC are for reds, Tannin Elevage and the Tannin Maturation Premium Blend at 40g are ageing tannins for fruit and oak character, and EnartisPro Tinto is a blended product for reds. Use these food-grade Nylon Immersion bags for soaking oak chips in wine tanks (stainless steel, concrete, plastic, etc.). Each nylon immersion bag can be used for either French or American Oak Chips.

These Hungarian oak, made in Italy barrels are the perfect addition to your own personal bar, thanks to the high quality and durable Hungarian oak build and the superior finish.
They provide your wines and spirits with distinctive characters: from the brown spice aroma, with subtle toasted aromatics.to the savory tannin's that respect fruit with mid palate depth. Directions for use:
- Insert the wooden spigot in its hole and make sure it is perfectly fixed;
- fill about 2/5 of the barrel with hot water mixed with salt;
- shake well so that the inside of the barrel is perfectly soaked. Let it rest for a couple of days and shake the barrel twice a day;
- turn it upside down every 12 hours so both parts soak in the water evenly;
- empty the barrel after a couple of days, rinse it well and let it dry;
- pour some hot wine into the barrel and keep ikt always full for about 10 days;
- finally, empty the barrel without rinsing and let it dry for a couple of days: now the barrel is ready to mature your wine/spirits!

When used in wine, performing laboratory trials is advised to evaluate the sensory impact and to determine the best dosage.
While it is recommended to add EnartisTan Total Fruity during the early stages of wine maturation, it can be added as late as 1-2 weeks prior to bottling. When added close to bottling, it is important to evaluate the effect on filterability and protein and colloidal stability by completing preliminary laboratory trials.
