Jam Making

Jam making at home is mostly about heat and patience. You want a pot that spreads the heat evenly and gives the fruit room to bubble without climbing over the sides, and you want to get the finished jam out of the pot and into jars without wearing half of it down your arm. The two pieces we keep here are aimed squarely at those two problems.

The double wall stainless steel cooking pot with a jam dispensing valve is the centrepiece. The double wall construction means the sugar has less chance to catch on the base, and the valve lets you fill jars straight from the pot instead of ladling hot jam across the bench. The stainless steel steam juicer handles the stage before that. It is made for stone fruits and grapes and draws the juice out with steam rather than crushing and straining. If you are heading towards jellies, cordials or grape juice, that is the piece to look at.

Something worth doing. Prepare your fruit the day before and let it sit with the sugar overnight. It draws the juice out and gives you a shorter run on the heat, which keeps more of the fresh fruit flavour in the finished jam.
