A 0.9 g/L addition of potassium bicarbonate results in a 1 g/L reduction in titratable acidity. Under typical wine conditions and normal use, potassium bicarbonate neutralizes only tartaric acid. It is best used on high acid and low pH wines. Potassium bicarbonate will cause an increase in pH when used.
When dissolved in a solvent, sodium Metabisulphite is a granulated powder that releases sulphur dioxide. It's added to fresh juices in small amounts 24 hours before yeast is added. This will destroy any wild moulds and bacteria that might have been present on the fruit.
As an equipment sanitizer, sodium metabisulphite is often used in higher doses with water. It can be used to clean fermenting containers, hydrometers, bottles, hoses, and anything else made of glass, metal, plastic, or wood that comes into contact with your beer or wine.
Every gallon of liquor contains about 55 parts-per-million (p.p.m.) sulphur dioxide (SO2). Every gramme would give each gallon of liquid 175 p.p.m.
Sodium Metabisulphite is a powerful sterilising powder that, when dissolved in cold water (where it produces sulphur dioxide gas), prevents mould and bacteria from growing on all surfaces.
Brewing and winemaking supplies, as well as beer and wine bottles, are sterilised with this solution.
This product sterilises (sanitises) rather than cleans. This product should be used with clean equipment. 1 tablespoon per 5 litres of water is the recommended dosage. Allow the solution to come into contact with all surfaces. This dilution rate is only for equipment sterilisation.
Note: While sodium metabisulphite is used as a preservative in some cases, you should strictly adhere to food application laws and obtain details about its use from food safety authorities.
WARNING:
The sulphur fumes from this product can cause sensitivity in some people. In enclosed spaces, do not use this product. When working with diluted solutions, gloves are recommended.
TO PURIFY JUICE, ADD 1/16 teaspoon Sodium Metabisulfite per gallon of juice or 8 pounds of crushed fruit. Before applying to the juice, pre-dissolve in a small amount of water. Allow the juice to breathe for 24 hours in an open container before adding the yeast. Dosage should be doubled for overripe and possibly mouldy fruits.
ALL EQUIPMENT SHOULD BE Washed WITH SOAPY WATER PRIOR TO SANITIZATION. For each gallon of water, dissolve 1 teaspoon of sodium bisulfite. Add 1/2 teaspoon of citric acid as well. Put 2 to 3 inches of solution in the bottom of fermentation vessels to sanitise them. Enable the gases from the solution to permeate the inside walls by sealing the vessel airtight for 20 minutes.
You can also put in the vessel other equipment such as hoses, hydrometer, air-locks, rubber stoppers to be sanitized at the same time.
TO Retain the color and taste of the BEER OR WINE during BOTTLING: Add 1/16 teaspoon per gallon of beer or wine. Second, dissolve in a small amount of wine. To prevent re-fermentation, potassium sorbate is also recommended at this time. After adding the ingredients, bottle them right away.

Malolactic fermentation (MLF) in winemaking, is often considered a simple conversion process of malic acid into lactic acid, operated by Oenococcus oeni bacteria. This hydrometer allows you to keep track of your fermentation& progress and determine the finished product & alcohol content by taking readings before and after fermentation and comparing them. This triple scale hydrometer also allows you to verify when your batch is ready to bottle by showing you the specific gravity.
A hydrometer cannot read the actual alcohol content of wine or beer that has finished fermenting. it can only be used to calculate 'potential alcohol" by reading the sugar content.
HOW TO USE THE HYDROMETER
The hydrometer has a long glass section containing the calibrated scale and it is weighted at the bottom, (with a bulbous lower end) so that it will float upright in a liquid. The scale of figures on the hydrometer appears to be ‘upside down’ the smallest being at the top and the largest at the bottom.
To read the hydrometer you can either float it in some decanted liquid in a tall test jar or cylinder.
Always spin the hydrometer after placing it in the liquid to remove any air or gas bubbles clinging to the glass which will give an inaccurate reading.
Steady the hydrometer and take your reading immediately it stops bobbing as all hydrometers will slowly rise up.

This Stick-On Thermometer is 6 inches in length, so you can easily stick it onto the side of your glass or pot fermenter. It’s a strip of tape, with a black adhesive backing, so it’s easy to position on your fermenter. 10-40C
Tartaric Acid plays a role in maintaining the stability of wines and has an influence on the flavour, aroma and colour of the final product. It reduces the pH of the wine which aids in minimising infection risk by preventing the growth of common spoilage microorganisms.
The addition of acid such as tartaric acid, malic acid or citric acid brings tartness to the wine which helps to balance the sweetness from the grapes that would be too sickly otherwise. A low pH also improves how well the wine ages and improves it shelf life.
Tartaric Acid is usually added either before primary fermentation has commenced or during primary fermentation. As it is not bioavailable tartaric acid is not broken down or used by the wine yeast and hence is the ideal acid in combination with malic acid to adjust the acidity of your wine.
The typical desirable pH range of red wine is between 3.3 to 3.6 and the desirable range for white wines is between 3.0 to 3.4. It is important to add an accurate mass of acid to adjust the final pH of the wine to be within this desired range.
Maintaining a stable pH or hydrogen ion concentration is crucial to obtaining a good yield from fermentation. The solution is available in red or green.
pH7 is ideal for those requiring an accurate neutral reading, particularly those working in water purification, the food industry, the medical industry, aquatics and hydroponics or wherever the pH is expected to be neutral.
