Botanicals
Botanicals are where a spirit stops being neutral and starts being yours. Juniper and a handful of other aromatics, a bit of contact time, and the same base liquid can go in completely different directions.
We stock the raw botanicals loose so you can build your own bill: dried juniper berries, coriander seeds, fennel seeds, whole sifted rosemary, marjoram, mace powder, star aniseed in 500g, and Peruvian organic raw cacao nibs if you are working on something darker. If you would rather start from a blend, Still Spirits do gin botanicals including a Rosemary Gin and a Mint Leaf Gin, and Kegland's Impressence tonic flavour shot in 50mL is handy for the other half of the glass.
For holding them there are baskets to suit different setups. Still Spirits make a botanical basket and an infusion basket for the Air Still, with a separate basket for the Air Still Pro, and Pure Distilling do a stainless infusion basket at 40mm diameter by 140mm.
The practical bit: change one thing at a time. Juniper carries the backbone and everything else is a supporting note, so start with a small addition of coriander or fennel and write down what you did. Botanicals in a basket give you a lighter, brighter result than the same weight sitting in the pot, so keep your notes consistent about which method you used. Coriander seeds have a distinctive zesty, aromatic flavour, similar to a blend of lemon and sage. Coriander seeds can be used whole or ground and a light toasting can enhance their flavour and aroma and to impart a refreshing but slightly spicy citrus flavour to sweet and savoury dishes. Juniper Berries are dark purplish berry that are known for giving gin its characteristic taste. These berries have a woody, pine-like aroma and a refreshing, spicy flavour. If you plan to grind Juniper Berries, make sure to grind them immediately before using as they lose their flavour quickly once the seeds inside are exposed. The Still Spirits Air Still Infusion Basket is a stainless-steel basket suitable for infusing distilled spirit with botanicals. This basket is not compatible with the Air Still Pro.
The Air Still has a hole under the lid where vapour enters and condenses in the cooling coil before coming out as liquid alcohol.
The basket is easily attached to the underside of the Air Still lid by aligning the indentation on the basket with the nodes on the lid.
We do not recommend turning the top of the Air Still upside down when inserting the basket. Make sure no material falls into the hole.

Pink peppercorns don’t have the same flavour and heat of regular peppercorns, but add a light sweetness and pair beautifully with fish and game dishes. They are a wonderful addition to fruit sauces, vinaigrettes and desserts. Peppercorns can be used whole, cracked, or as a powder, although we recommend having them removed before serving as they are not pleasant to bite into.
