String
String is the sort of thing you never think about until you are elbow deep in mince with a half tied salami swinging off the bench. It has to hold a wet casing tight, survive months in a curing room without rotting or shedding, and not add anything to the flavour. Cotton does all three, which is why it has been the butcher's choice for a very long time.
Nearly everything here is Italian cotton, and the decision is really about format and how much you get through. The small rolls in white, red and natural suit a household doing a batch or two a year, and the red is handy if you like to mark a different cure or batch date at a glance. The large rolls and the natural large roll 2/1 are for families who set aside a whole weekend. Spools, bobbins and the bulk cotton spools sit in the hand nicely for continuous tying, and the set of four 40 gram spools in a medium 2/4 gauge is a tidy starting point. Pre made cotton hanging loops save you tying the top knot at all. If you want something with a bit more stretch and strength, the poly cotton white medium roll 2/4 runs about 320 grams.
Cut a generous length. Running out mid salami is a two hand problem with no spare hands. Pop in to Laverton North or Epping. See also salami and sausages, netting and netting tubes and hooks and handling.

Salami tying twine, a set of four Italian cotton spools at 40g each, in a medium 2/4 gauge. Four spools spread through the shed means you are not hunting for the roll with sticky hands halfway through a batch.
Cotton rather than poly cotton, which is what most people prefer for traditional salami tying. Available at both Laverton North and Epping.
White poly cotton string in a medium 2/4 gauge, on a roll of roughly 320g. Made in Italy and stocked for salami work, where you need something that grips a knot and holds while the salami hangs and shrinks.
Poly cotton rather than pure cotton. If you want the all cotton spools instead, we keep those too, so ask at the counter.
