Malt Extract: Liquid & Dry

Malt extract is malt that has already been mashed for you. The maltster does the mashing and concentrating, and you get the malt sugars as a thick syrup or a fine powder, ready to dissolve. It is how most of us first brew past a basic kit, and it is still the easiest way to add body, colour and strength to a batch.

Liquid malt extract. Thomas Cooper Liquid Malt Extract in Light, Amber, Dark and Wheat, and Morgan's Master Malts in Pale Light, Wheat, Caramalt and Roasted, plus the Master Malts Beer Enhancer Extra Pale for the lightest coloured beer.

Dry malt extract. Wander light and dark dried malt extract from Switzerland, with Coopers and Briess dry malt when we have them in. Powder keeps well once opened and is easy to weigh out in small amounts, so it is the one to use for a yeast starter.

Brew enhancers. Our own Light Malt Mix is a house blend of maltodextrin, light malt powder and dextrose, and the Bintani Dark Malt Mix suits darker beers. Use either in place of plain sugar with a beer kit for more head, flavour and body.

A tip for brew day: stand a can of liquid extract in hot water for ten minutes and it pours far more easily. Dry extract clumps when it meets steam, so add it off the heat and stir as you go.

Frequently asked questions

Liquid or dry malt extract: which should I use?

Both give the same kind of malt sugar. Liquid extract comes in cans and is easy to pour once warmed. Dry extract is a powder that keeps well once opened and is easy to weigh in small amounts, which makes it handy for yeast starters. As a rough guide, 1 kg of dry extract gives about the same gravity as 1.2 kg of liquid, because liquid extract still contains some water.

Why use malt extract instead of sugar with a beer kit?

Sugar adds alcohol but no body or flavour. Malt extract adds alcohol plus body, head and malt flavour, so a kit beer tastes fuller. A brew enhancer sits in between. Our guide to tin brewing with beer kits covers it.

Which malt extract colour should I choose?

Light suits lagers, pale ales and most kits. Amber adds colour and caramel for red and amber ales, dark and roasted suit stouts and porters, and wheat extract is for wheat beers. You can mix them in one batch.
