Not all rennets are made from calves' meat. There is now a vegetarian option too. Vegetarian rennet serves the same purpose as "regular" rennet, to coagulate proteins in milk to make vegetarian cheeses. The difference is that vegetarian rennet is vegetable or microbial in origin. This is a coagulant made from a selected strain of the fungus Rhizomucor miehei. It is widely used in the commercial cheese making industry to coagulate the milk for cheese and junket making. It contains no animal tissue and is therefore particularly good if you would like to make vegetarian cheeses. This rennet is G.E Free.

This Merlot mother of vinegar is a thin film of slimy, gelatinous bacteria that encourages fermentation.
If you’ve bought a bottle of raw apple cider vinegar, you’ve probably seen a leftover mother floating in the bottom of the jar. This bacteria has the more scientific name of mycoderma aceti but calling it a mother is so much more poetic.
The magical thing about mothers is that during the fermentation process they give “birth” to other mothers that can be used in future batches of vinegar. People who regularly make their own vinegar can use new generations of one mother to make vinegar for decades.
Other than a mixture of wine, water and a mother, the only other supplies you’ll need are a 1-2 gallon vessel to ferment the vinegar and some cheesecloth. A ceramic crock works well because it keeps out damaging light, but a jar wrapped with cloth or paper to keep out the light could work, too. Covering the top of the vessel with cheesecloth keeps insects out, but lets air get in to feed the bacteria. Tucked away in a warm, dark place, the magical transformation into tasty red wine vinegar will begin. Months later, you’ll be rewarded and we think you’ll agree, it’s worth the wait.

What Qualifies As A Soft Cheese?
Fresh, unripened, soft cheeses are simple to make and most can be stored in a fridge for up to 5 to 7 days. As these cheeses do not ripen, they are very mild and refreshing. These cheeses are also called 'soft curd cheeses' as a clean break is not required.
These cheeses make wonderful dips and spreads and go well with salads and fresh fruits. Soft cheeses can be used in cooking, both main dishes and desserts.
How Do You Dose Cheese Culture For Domestic Use?
We are often asked, "if my culture pack is enough for 100 litres, how do I work out how much to use for four or eight litres"? We supply sterile jars with the culture so that you can see how much culture you have available to inoculate 100 litres of milk. Estimating by eye is acceptable as this is a living culture that will soon grow, and too much can't hurt.

Penicillium Roqueforti (VZ3) is an important ingredient in the production of blue cheese. It is a dried, powdered conidia produced from the fungus Penicillium roqueforti and is responsible for the blue mould which appears in your cheese. Aromatic Mesophilic (YV32) is essential in creating the creaminess and buttery flavour in the cheese. Strains included in this culture are:
- Penicillum roqueforti
- Lactococcus lactis subsp. cremoris
- Lactococcus lactis subsp. lactis
- Lactococcus lactis subsp. lactis biovar diacetylactis
- Leuconostoc
