pH is the number that tells you whether a ferment is heading where you want it. Too high in a must and you get flabby wine and unhappy yeast. Too low in a mash and your enzymes sulk. Reading it takes about ten seconds once you have the right tool on the bench.
Strips are the quick, cheap option and they are honestly fine for most home work. Ph Paper 100 pk covers the full 0 to 14 range for a rough check. The narrower papers are where the accuracy lives, so Ph test Paper 3.8 to 5.4 for mash and beer, and the PEHANON papers from Germany in 2.8 to 4.6 and 5.2 to 6.8 for wine and cheese work. If you want a number rather than a colour match, the Kegland PH Meter BD pen reads to 0.01 resolution.
Buy a meter and you have bought a maintenance job with it, so plan for that. You will want Buffer PH 4.01 Red and Buffer PH 7.01 Green for calibration, Ph Probe Storage Solution KCI 3 Mol/L, and pH Probe Cleaning Solution. Never let a probe dry out. That is what kills most of them, not age, and a replacement probe for the BD series costs far more than a bottle of storage solution.
