Rolling Pins

A good rolling pin is a length of hardwood with no bearings to seize and nothing to break. Buy the right one and it outlives you.

For pasta, longer is better. The 70cm at 7cm diameter and the 57cm at 9cm with rotating handles are the ones for rolling a full sheet, because a pin shorter than the sheet forces you to work in sections and you lose the even thickness. The 50cm at 7cm suits a smaller board, and there is a plain timber pin from Panetta Casalinghi plus a 38cm Ken Hands at 65mm for general kitchen work.

The specialists are worth knowing. A pasta rolling pin with a tagliapasta cutter built in rolls and cuts in one tool. A small wood dough roller at 3.5 x 10cm gets into the corners of a tray. And the mini tapered pizza roller does the edges of a base without flattening the crust you just built.

One with a fixed handle suits anyone who wants more control on smaller work.

Care is simple and people get it wrong. Scrape, wipe with a damp cloth, dry standing up. Never soak one and never put it in the dishwasher, or the grain lifts and it will never roll smooth again.

Pair it with a proper board. See also wooden pasta boards, cutters and wheels and pastry tools. Part of our Pasta Making range.
