Pizzelle irons are one of those things a family owns for fifty years and argues about at Christmas. Ours are made by CBE in Italy, cast plates and a proper hinge, and every pattern is a different biscuit.
The electric models are the easy choice for a kitchen. Classic, Flat, Rosone, Presentosa, Diamond with dots, Hollow Walnut, three circles, three small balls, two, four and thin four flowers, five and eight hearts, six sponge fingers, and an ice cream cone iron that rolls while the pizzelle is still hot. Plug it in, wait for it to come up to heat, and you are away.
The gas models are for the ones who learnt on their nonna's. Ferratelle, Presentosa, Rosone, Diamond, four flowers and five hearts, all made to sit on a gas ring. They take longer to master and most people who have one will not swap. There is also a 13cm aluminium stamp for gas with a cone roller if you only want the shape.
Spare handles and connector cables are stocked, because a forty year old iron usually needs a cable, not a replacement.
A cooling rack matters more than you would think. Pizzelle go soft if you stack them warm.
