Cheese Tools & Accessories
Cheese making is mostly patience and clean gear, but a few tools make the difference between a curd that sets nicely and a frustrating afternoon. Cutting curd evenly, draining it properly and keeping the milk at the right temperature are the jobs, and none of them need anything fancy.
Start with a curd knife. The Mad Millie curd knife suits a small kitchen batch, while the Green Living deluxe curd knife has the reach for a bigger pot. For draining you want cloth, either the 90 by 90 cm Mad Millie muslin sheet or the stockinette net sleeve if you are hanging a cheese to firm up. The Mad Millie soft press with its plastic plunger handles the gentle pressing soft cheeses need, and a 3 ml plastic pipette makes dosing liquid far less of a guess. For yoghurt and cultured milk there is the Green Living electric yoghurt maker, the Mad Millie coconut yoghurt jar and the Mad Millie fermenting crock. Once the cheese is made, the Incasa four sided box grater or the OMAC La Grattugia Inox handles the hard stuff, and there are cheese knives from Mad Millie and F.Dick, including one shaped for soft brie.
Worth knowing: rinse muslin in cold water first, never hot. Hot water sets the milk protein into the weave and the cloth never comes properly clean again.
Both our Laverton North and Epping stores keep these on the shelf. See also cheese making, ingredients and cultures and cheese moulds.

The green living yoghurt maker is a fantastic appliance that will enable you to make delicious batches of yoghurt, no matter how large or small, with perfect accuracy, even over extended fermentation times.
Features:
- Easy to use: just fill with your ingredients, plug it in and wait for your beautiful yoghurt to ferment.
- Works with cows milk, goats milk, soy milk and even coconut cream.
- Suitable for extended fermentation times of 24 hours or more.
- Maintains the temperature very accurately between 39 and 43° C.
How it Works:
The electric yoghurt maker will help keep your milk at the right temperature for natural fermentation to occur. All you need to do is add your dairy or non-dairy milk (or coconut cream) to the inner container, add your culture, and switch it on. Then wait the required amount of time as per the instructions included with your culture. Once it's finished, pop the container in the fridge and chill before enjoying with your favourite dish.
Details:
- The yoghurt maker stands 265 mm high, with a diameter of 190 mm.
- Comes with a high quality BPA free food grade 2 litre fermentation pot.
- Yoghurt makers should run between 37 to 43° C and should not creep up in temperature, even over extended fermentation times. Please note that yoghurt makers are designed to maintain heat and not to heat your milk up to fermentation temperature.
- Please Note: Your dairy milk will need heat treating to 90° C, to help break down or unravel some of the dairy proteins and help make a thicker yoghurt. Long Life, or UHT milk has already been heat treated so just needs warming to around 40° C before being put into the yoghurt maker and adding the culture.

Part No1 for the Ghiro cheese grater: the plastic tray drawer that catches the grated cheese as it comes off the roller. Trays crack and go brittle long before the rest of the machine gives up, and replacing one is far better value than replacing a grater.
Confirm your machine is a Ghiro before ordering, and bring the old tray in to Laverton North or Epping if you want us to compare them.
