Guessing at temperature is where most kitchen jobs go wrong. Pizza bases that look right and come out pale, oil too cool to seal anything, a wood fire that feels hot but is nowhere near where it needs to be. A thermometer takes the argument out of it, and the right one depends entirely on what you are pointing it at.

For a pizza oven, the 30 cm Pizza Oven Thermometer, the Italian temperature gauge and the 3 inch dial gauge for wood fire all read the deck or the dome without you reaching in. To read from a distance there are infrared laser guns, the Kegland black gun covering -50 to 580 C and our own covering -50 to 420 C. For food itself, the digital pocket thermometer with probe reads -50 to 300 C, and there are stainless oven probes from Kegland and Incasa in the 50 to 300 C range. The 60 mm dial with the short weldless probe suits a vessel fitting, and the Still Spirits digital thermometer is made for an alembic dome.

Worth knowing, an infrared gun reads surfaces only. It will tell you what the pizza stone is doing but not what is happening inside a roast, so most people end up owning both.
