For hanging, the Lonatini stainless steel gambrels come in a 550 mm version with a fixed ring and a 550 mm version with a swivel pulley, and there is a five hook stainless hanger for smaller cuts. The 250 mm butchers track roller hook suits anyone with a rail set up. Grab hooks come as a 6.5 inch stainless and a 5 inch nylon, and there is a pricker tool with a safety cap for casings. For wrapping and ageing, the Misty Gully banquet bags cover dry age steak in a 35 by 35 cm six pack, a charcuterie bag for cured meats and a 50 mm by 5 m salami bag. Before anything gets smoked, a Lonatini meat tenderiser, the stainless meat pounder or the aluminium handled Italian tenderiser opens up a cut. If you want cold smoke rather than hot, the Double Barrel Cold Smoker is our own set up.

Why dry age meat? It’s simple… Flavour! Meat aged for around 21 days will develop a depth of flavour and texture that will improve it dramatically.
You can turn a sub prime piece of beef into something amazing. And unlike ordering at a restaurant, you wont be forking out $75 a pop! The key effect of dry aging is the concentration and saturation of the natural flavour, as well as the tenderisation of the meat texture. The process changes beef by two means. Firstly, moisture is evaporated from the muscle. The resulting process of desiccation creates a greater concentration of beef flavour and taste. Secondly, the beef’s natural enzymes break down the connective tissue in the muscle, which leads to more tender beef.
