• Running the tomato machine dry is a very bad idea. It could harm the machine.
• At first, run one small batch of tomatoes through the machine, discard this batch and you’re good to go! Some people choose to run a mixture stale bread soaked in water through the machine instead of tomatoes!
• Always dampen the tomatoes before re-processing them. Also, blanching tomatoes before processing them can make the process much quicker but this also does impact the sauce's flavour to some extent.
• Clean the milling attachment and motor before storing everything for the winter. All parts are easy to disassemble, however ensure that the parts are carefully stored. A missing part could impact the equipment's functioning. Apply a thin coat of olive oil and place in a ziplock bag.
