Meat Tenderisers

Tenderising looks brutal and is actually quite precise. You are breaking down muscle fibre so a tougher or cheaper cut cooks evenly and takes a marinade properly, or flattening a piece to an even thickness so it cooks through in the same few minutes right across. Either way the tool decides how much control you have.

The one piece mallets are the workhorses. There are aluminium handled versions from Italy and from Incasa, and a one piece stainless tenderiser with a nerve cutter face if you want something that cuts through sinew as well as flattens. Lonatini makes a professional meat tenderiser and a stainless steel meat pounder, the pounder being the flat faced option for schnitzel and scaloppine where you want thickness, not texture. The stainless manual tenderiser handles blade style work. Something worth doing. Put the meat between two sheets of baking paper before you start. It stops tearing, keeps the bench clean and lets you feel when the thickness has evened out instead of guessing at it.
