Copper & Alembic Pot Stills
Copper alembics, made the way they have been made in Italy for a very long time. Hammered copper, soldered seams, and a shape that has not needed improving.
The Italian made range starts small. A 0.5 litre traditional alembic still, a 1 litre with a water condenser, and the 4.9 litre copper pot mini distillery that comes with a thermometer and a flame burner, which is the one most people choosing this range end up with. There is a stainless false bottom steamer basket sized to that 4.9 litre pot for working with botanicals rather than liquid. At the larger end, a 23 litre Italian copper boiler.
The Still Spirits range is built to bolt onto gear you may already own. The alembic copper pot condenser and the Create+ copper dome and condenser, a dome attachment kit, the T500 condenser, and an extension dome plus a G40 distilling lid with a 100mm triclover fitting for Grainfather setups. There is also a Pure Distilling copper dome top at 29cm with a 60mm hole.
Copper is not decorative here. It reacts with sulphur compounds during a run, which is why traditional stills are made from it and why they are worth cleaning properly rather than polishing.

The G40 & G70 Distilling Lid is designed primarily for small to medium-sized still heads that do not have heavy, off-centre attachments. The lid is reasonably flexible and is sturdy enough to fit a still head that is within the following specifications:
- A still head height up to 1.1 m (3.6 ft) from the lid.
- A still head weight up to 11 kg (24 lbs), including up to 2 kg (4.4 lbs) of off-centre weight from a swan neck, lyne arm, or
- Condenser running in parallel with the column and offset up to 160 mm (6”) to the main column.

Why are stills made from copper?
Copper reacts with sulphur compounds released during a run, which helps take harsh smells out of the spirit. That is why traditional alembics are made from it, and why it is worth cleaning a copper still properly after each use.
Should I choose a pot still or a reflux still?
A pot still carries more of the wash's flavour through, which suits whiskey, rum, brandy and grappa. A reflux still strips more out to make a cleaner, stronger neutral spirit for vodka or for flavouring with essences. See pot still vs reflux still vs air still.
Can I use a copper alembic for essential oils?

Is home distilling legal in Australia?
Distilling alcohol in Australia needs an excise manufacturer licence for a still of any size, and the ATO says it does not grant licences to distil spirits for personal consumption. You can own a still of 5 litres or less without ATO permission if you are not using it to distil alcohol, for example for distilled water or essential oils. Stills over 5 litres need ATO permission.
