The small tools that finish pasta. None of them cost much and all of them change how the job feels.
The wheels come a few ways. A double stainless wheel cuts two edges at once so your strips come out even. A round smooth edge wheel gives you a clean cut for lasagne and pappardelle, and the adjustable four blade serrated roller sets your width once and cuts four ribbons in a pass. The ergonomic handle cutter with alloy wheels is the comfortable one for a long session, and the Caper Italy pastry and pasta cutter does double duty in baking.
For filled pasta, a 50mm round ravioli stamp with a quick spring release pops each one out rather than making you pick it off. The brass cappelletti tagliapasta with a wood handle is the traditional tool for those, heavy enough to cut through two sheets cleanly. Tortellini rolling tools come in large oval and rectangle.
The pasta rolling pin with a tagliapasta cutter built in rolls and cuts in one, and the 150mm wood scraper is the thing you actually reach for most: it lifts dough off the board without tearing it and cleans the board down afterwards.
