Ginger beer
Ginger beer is the one everybody in the house will drink, which makes it a good place to start if you have never brewed anything, and a good thing to keep on hand if you have been brewing for years. It is quick compared to most beer, it does not need much gear, and the ginger does plenty of the work for you.
The kits here split into a few kinds. Colony West Smooth Ginger Beer makes 23 L and is the one to look at for a full batch. The Traditional Series Ginger Beer by Mangrove Jacks and the Morgans Ginger Beer Pouch at 1 kg are the tinned and pouched options, and Coopers Ginger Beer comes in a 500 g size. To keep it small and simple, the Mad Millie Ginger Beer Starter Kit is a 5 L setup. Yeast is worth thinking about separately, with Morgans Ginger Beer Yeast and a Mad Millie ginger beer and ale yeast three pack. The Morgans Ginger Cider Flavour at 50 ml is there if you want to take a batch sideways.
A tip. Ginger beer carries on fermenting in the bottle more readily than most brews. Store it somewhere cool and keep an eye on it rather than leaving it in a warm cupboard and forgetting about it.

How to Brew?
Shake the can thoroughly before opening it.
Non-alcoholic Ginger Beer Home Brew Kit:
1. Add 2 litres of hot water (not boiling) to a clean and sanitised container with a capacity of greater than 20 litres. Pour in the contents of this can and 115g of normal household sugar and stir to fully dissolve.
Warning - add only the correct amount of sugar otherwise overgassed bottles could explode.
2. Add cold water to make up to 20 litres, stir while filling. Stir in yeast and nutrients thoroughly then cover vessel and allow to stand for half an hour. Stir occasionally during this period.
3. Assemble sufficient clean and sanitised bottles. Do not add any sugar to bottles. Stir brew again then fill bottles to the normal level and seal. Store bottles above 20 deg C for 2-3 weeks before opening. Use only as directed.
Alcoholic Ginger Beer Home Brew Kit:
1. Add 2 litres of hot water (not boiling) to a clean and sanitised fermenter, pour in the contents of this can and 1kg of dextrose. Stir to fully dissolve.
2. Add cold water to make up to 20 litres, stir while filling. Stir in yeast and nutrients thoroughly. Seal the fermenter with a lid and airlock, and allow it to ferment between 22 and 30 Degrees C.
3. Fermentation will take around 6 days at a constant temperature of 25 degrees C but will take longer at lower temperatures. Bottle once fermentation has finished and a hydrometer SG reading of 1005 or below has been achieved.
Warning - Do not bottle until fermentation has finished, adding only the correct amount of sugar to each bottle, otherwise overgassed bottles could explode. Adding sugar to the bottles is to gas the ginger beer to the right level. Bottle after adding 6g sugar to each 750ml bottle or 3g of sugar to 375ml bottles. In other drink bottles, add 8g of sugar to the litre. Seal bottles and store bottles above 20 deg C for 2-3 weeks before opening. Use only as directed.

- Fill with cold water to make 20 litres total volume. Stir well.
- Sprinkle the included dry yeast on the surface. Fit lid and airlock.
- Ferment at 18–26°C until gravity is stable (approx. 5–7 days).
- Bottle using Coopers Carbonation Drops (1 per 375ml, 2 per 750ml).
- Condition for 2 weeks at 18–26°C.
- Chill and serve.
👉 Yields: ~20 litres of crisp, refreshing non-alcoholic ginger beer (ABV <0.5%).
Alcoholic Version
