Preserving goes wrong in small ways. Sauce down the side of the jar, vegetables bobbing up out of the brine, a lid that will not budge come August. This is the bits and pieces drawer that sorts all of that out.
The retaining discs are the heart of it. They sit inside the jar and hold the contents under the liquid where they belong, and they come sized to the jar rather than one size for everything: 58 to 61.5mm for a 70mm outside diameter jar, 72.5mm for an 82mm jar, 97mm for a 110mm jar, and an oval 169 x 143mm for the wide 110mm mouths. For filling there are jar funnels including the red Italian one from Rigamonti with a reducer, an adjustable handle funnel in a three piece set, and food grade funnels from SSS in 10 to 12cm and 16cm. For getting jars open again there is the Rigamonti lid opener, non slip cap openers and the SICO suction tool for 82mm jars. There is also a tapered jar cork and a 10mm plastic tap for a vinegar acetiera or demijohn.
Measure the jar, not the lid. Discs are sold against the jar outside diameter, so a quick check with a tape before you order saves a second trip.
