Grains and Sugars
Whatever you are making, it starts with something for the yeast to eat. Grains and sugars are the fermentable base of a wash, and the choice you make at this stage shapes the character of what comes off the still more than almost anything you do later. A neutral sugar base gives you a clean canvas. A molasses base brings its own flavour along with it. Botanicals sit on top of either one.
What we have on the shelf is a small and practical selection. Bundaberg food grade molasses in the 14kg pail is the one for anyone working towards a rum style wash, and the pail size means you are set for more than a single run. Still Spirits liquid glucose in 1kg is the straightforward fermentable for a neutral wash, easy to dissolve and consistent from batch to batch. Dried juniper berries are here for the gin makers, the backbone botanical everything else in a gin gets built around.
A tip worth passing on. Dissolve your sugars fully in warm water before the wash goes anywhere near your yeast, and let the temperature come back down first. Undissolved sugar sitting on the bottom of a fermenter does nothing except make your gravity readings lie to you.
We are at Laverton North and Epping if you want to talk it through, and do check what applies to you. Browse distilling yeasts, botanicals and spirits and distillation.

Juniper Berries are dark purplish berry that are known for giving gin its characteristic taste. These berries have a woody, pine-like aroma and a refreshing, spicy flavour. They benefit from being crushed slightly before use to help release the flavours. If you plan to grind Juniper Berries, make sure to grind them immediately before using as they lose their flavour quickly once the seeds inside are exposed. Juniper Berries add a refreshing element to many foods, particularly to heavy, rich dishes and gamey meats.
