Making your own drinks comes down to the same handful of jobs every time. Ferment it cleanly, move it without picking up oxygen, then get it into a bottle that actually seals. This is where we keep the gear that crosses over between beer, wine, spirits and vinegar, so you are not hunting through four categories to find one fitting.
Start with the vessel. Our narrow neck and wide neck glass demijohns come from Italy with PVC baskets. Wide neck is far easier to clean and easier to load with fruit or must. Narrow neck suits a longer, quieter ferment and takes a demijohn cap or a bored silicone bung with an airlock. For bigger volumes, Algor inflatable seals cover variable capacity tanks. On the finishing end we stock 750ml claret flint bottles, 375ml BVS bottles, Diam corks, Novatwist screw caps for BVS necks, and Ferrari expansion stoppers for anything you want to shut again tomorrow.
One thing worth knowing. Oxy Clean sodium percarbonate will lift the ring inside a demijohn that no brush can reach, but it needs a good hot soak and a proper rinse. Citric acid afterwards neutralises what is left and keeps the glass clear. Most of the off flavours people blame on their yeast started life as a lazy clean.

This Merlot mother of vinegar is a thin film of slimy, gelatinous bacteria that encourages fermentation.
If you’ve bought a bottle of raw apple cider vinegar, you’ve probably seen a leftover mother floating in the bottom of the jar. This bacteria has the more scientific name of mycoderma aceti but calling it a mother is so much more poetic.
The magical thing about mothers is that during the fermentation process they give “birth” to other mothers that can be used in future batches of vinegar. People who regularly make their own vinegar can use new generations of one mother to make vinegar for decades.
Other than a mixture of wine, water and a mother, the only other supplies you’ll need are a 1-2 gallon vessel to ferment the vinegar and some cheesecloth. A ceramic crock works well because it keeps out damaging light, but a jar wrapped with cloth or paper to keep out the light could work, too. Covering the top of the vessel with cheesecloth keeps insects out, but lets air get in to feed the bacteria. Tucked away in a warm, dark place, the magical transformation into tasty red wine vinegar will begin. Months later, you’ll be rewarded and we think you’ll agree, it’s worth the wait.
Dextrose brewing sugar, also referred to as corn sugar, is a naturally occurring form of glucose. Use dextrose instead of white sugar in either your fermentation or priming your beer when bottling.
Dextrose improves the quality of beer when compared to ordinary cane sugars. It is fully fermentable and leaves a fresh, clean flavour.
Dextrose is the preferred brewing sugar as it ferments all alcohol content with a neutral flavour allowing the malt flavour to taste more prominent. For more flavour and body, alternatively use dried malts.

DIAM, our technological cork for still wines and it is the only cork closure that provides both a perfect homogeneity between one bottle and another and perfect control over the different levels of permeability. The DIAMANT® method also provides incomparable sensorial neutrality.
The reference #1 corks are the traditional bottle closure for wine intended for long term maturation and storage. A silicone coating on the cork reduces the drag when it slides through the corker. Newly purchased corks in an unopened pack do not require sterilization. To soften the corks for easier insertion by manual corkers, only then place in a colander over a bucket and allow boiled water vapour to rise up through the corks for a few minutes before using.
No 2 - 1 to 3+ years
No 5 - 1 to 5+ years
Tested and approved by many international laboratories, Diam is an innovative closure that combines the tradition of a cork stopper and the mechanical and organoleptic security of a technological closure:
• TCA taint-free (below the limit of quantification of 0.3 ng/l) and many other molecules responsible for sensorial deviations.
• Optimum bottling line (insertion) performance and unsurpassed elastic recovery.
• Prevents leakage, seepage or dust risk.

When dissolved in a solvent, sodium Metabisulphite is a granulated powder that releases sulphur dioxide. It's added to fresh juices in small amounts 24 hours before yeast is added. This will destroy any wild moulds and bacteria that might have been present on the fruit.
As an equipment sanitizer, sodium metabisulphite is often used in higher doses with water. It can be used to clean fermenting containers, hydrometers, bottles, hoses, and anything else made of glass, metal, plastic, or wood that comes into contact with your beer or wine.
Every gallon of liquor contains about 55 parts-per-million (p.p.m.) sulphur dioxide (SO2). Every gramme would give each gallon of liquid 175 p.p.m.
Sodium Metabisulphite is a powerful sterilising powder that, when dissolved in cold water (where it produces sulphur dioxide gas), prevents mould and bacteria from growing on all surfaces.
Brewing and winemaking supplies, as well as beer and wine bottles, are sterilised with this solution.
This product sterilises (sanitises) rather than cleans. This product should be used with clean equipment. 1 tablespoon per 5 litres of water is the recommended dosage. Allow the solution to come into contact with all surfaces. This dilution rate is only for equipment sterilisation.
Note: While sodium metabisulphite is used as a preservative in some cases, you should strictly adhere to food application laws and obtain details about its use from food safety authorities.
WARNING:
The sulphur fumes from this product can cause sensitivity in some people. In enclosed spaces, do not use this product. When working with diluted solutions, gloves are recommended.
TO PURIFY JUICE, ADD 1/16 teaspoon Sodium Metabisulfite per gallon of juice or 8 pounds of crushed fruit. Before applying to the juice, pre-dissolve in a small amount of water. Allow the juice to breathe for 24 hours in an open container before adding the yeast. Dosage should be doubled for overripe and possibly mouldy fruits.
ALL EQUIPMENT SHOULD BE Washed WITH SOAPY WATER PRIOR TO SANITIZATION. For each gallon of water, dissolve 1 teaspoon of sodium bisulfite. Add 1/2 teaspoon of citric acid as well. Put 2 to 3 inches of solution in the bottom of fermentation vessels to sanitise them. Enable the gases from the solution to permeate the inside walls by sealing the vessel airtight for 20 minutes.
You can also put in the vessel other equipment such as hoses, hydrometer, air-locks, rubber stoppers to be sanitized at the same time.
TO Retain the color and taste of the BEER OR WINE during BOTTLING: Add 1/16 teaspoon per gallon of beer or wine. Second, dissolve in a small amount of wine. To prevent re-fermentation, potassium sorbate is also recommended at this time. After adding the ingredients, bottle them right away.
This heavy-duty 750 ml wine bottle boasts vintage charm with its antique green color and deep punting, perfect for storing your finest wines.

Juniper Berries are dark purplish berry that are known for giving gin its characteristic taste. These berries have a woody, pine-like aroma and a refreshing, spicy flavour. They benefit from being crushed slightly before use to help release the flavours. If you plan to grind Juniper Berries, make sure to grind them immediately before using as they lose their flavour quickly once the seeds inside are exposed. Juniper Berries add a refreshing element to many foods, particularly to heavy, rich dishes and gamey meats.
