Drying Racks

Fresh pasta needs somewhere to go the moment it leaves the machine. Leave tagliatelle in a pile on the bench and it welds itself into one lump inside ten minutes. Hang it, and it holds its shape, dries evenly and cooks the way you meant it to. That is the whole job of a drying rack, and it is why they are one of the first things people add after the pasta machine itself.

Ours are all made in Italy and the choice comes down to space and volume. The 32cm rack is the compact one, fine for a household batch and easy to put away afterwards. The 49cm rack gives you more arms and more room between them, better when you are making enough for a family lunch. The stackable pasta drying rack is worth looking at if you make pasta often, since you can build upwards instead of taking over the whole bench. For short shapes that will not hang, the stackable drying boxes at 30 x 40 x 5 cm let you spread things flat and stack the trays.

A tip. Give the strands a light dusting of semolina rather than plain flour before they go on the rack. Semolina keeps them separate without going gluey on you.
