Pasta Making

Home > Pasta Making

Fresh pasta needs three things: a board, a machine and somewhere to hang it. Everything else is preference. One hundred and eighty five lines here, most of it Italian made and most of it repairable.

The pasta machine is the decision. Imperia pasta machines have been made in Turin since 1932 and the 150mm manual is the one most Melbourne kitchens already have a version of, with a Pasta Facile motor if you would rather not turn the handle. The Restaurant R220 is the wider machine for bigger batches, manual or electric. Attachments, ravioli moulds and spare parts are all stocked, which matters more than it sounds: a forty year old Imperia usually needs one small part, not a new machine.

For shapes the rollers cannot make, the Big Mamma and Little Mama makers do gnocchetti and cavatelli, and the gnocchi boards do the ridges by hand the way it has always been done.

Roll it out on a proper wooden pasta board with side rails, which stops the sheet sliding and gives the dough something to grip. A long rolling pin if you are doing it without a machine at all. Then ravioli moulds and tools, cutters and wheels, and drying racks to hang it while it dries.

If you are starting from nothing, the pasta making kits put the basics together, and attachments and pasta tools and accessories are there when you want to add a shape.

We know how you like your perfect comfort food - Polenta.. soft and creamy, yet with a slightly textured bite. The Italian staple, originated as a peasant food from northern Italy where it was cooked over open flames in a special vessel, a paiolo, that was made from copper, allowing the heat to be distributed evenly and with a curved bottom to stop it catching over its long cooking time. With The Artisan's Bottega Polentamatic you can now make such traditional Polenta in your own kitchen.

Mix the water and milk in your pot, place it over a medium heat and watch it carefully with whisk in hand and polenta nearby so you can catch it before it boils over. The Artisan's Bottega Polentamatic's copper pot is well-designed to let you cook in ease.

The polenta does not stick to the pot easily thanks to the electric stirrer. As the liquid comes up to the boil, slowly rain in the polenta with one hand and whisk with the other. Once it comes to the boil, turn the heat down to as low as it will go, throw in a large pinch of salt and continue whisking at regular intervals. This is very important in order to avoid lumpy polenta.

Cook for at least 30 minutes. The polenta is ready once you taste it and can no longer feel a grainy texture on your tongue. Mix in the butter and parmesan and season quite heavily with more salt and white pepper. Cover your pot with a lid and leave it in a warm spot to rest.
