An airlock is the cheapest bit of insurance in the whole shed. It lets the carbon dioxide out while your ferment is working and stops air, vinegar flies and dust getting back in. Watching it bubble is also how most people tell, at a glance, that things are going the way they should.
Choosing one comes down to what you are fermenting in. For demijohns and glass jars, the Ferrari cylinder airlocks are the classic Italian pattern, and the one sized for 10 to 34 litre demijohns covers most home carboys. The S-type with cap is the simple bent tube everyone recognises, and the Keg King three piece pulls apart for cleaning, which matters more than people expect once a ferment has blown through it. For a plastic fermenter or a jar lid, the Mangrove Jacks top hat grommet gives you a proper seal to push the airlock into. On stainless tanks it is a different job. The brass and stainless steel airlock extensions with 32mm inside diameter thread into the tank lid, with a 1.25 inch BSP lock nut to suit, and the large 28cm Ferrari cylinder holds enough water for a barrel or tank. There is also a two way vent for variable capacity lids.
