The oven is only half of it. Getting a pizza in, turning it, reading the floor temperature and clearing ash between bakes is what separates a good night from a stressful one, and none of that happens without the right tools within arm's reach.
Turners do the most work. Brush the floor between every pizza, not every third one. Burnt semolina is what gives the next base that bitter, ashy underside people blame on the dough.
