Fermentis SAF Ale US-05 is the house American ale strain, Lallemand BRY-97 for West Coast styles and Nottingham when you want the yeast to stay out of the way. Mangrove Jack's Craft Series covers the specialty strains including M05 for mead. Buy fresh, store it cold, and pitch enough of it.
Hops in pellets: Galaxy from Australia, Mosaic and the rest of the American range, plus the traditional European and UK varieties. Malt runs from base grain through to crystal and chocolate, cracked or uncracked, with dark and light malt mixes and brew enhancers if you would rather not build a grain bill from scratch.
Then the adjuncts most people forget until they need them. Dextrose for priming and for lifting gravity without body, lactose for sweetness that will not ferment out, and calcium hydroxide for adjusting brewing water. Phosphoric acid sanitiser for the gear.
