Whole grain keeps. That is the whole argument for buying uncracked. The husk is still sealed around the kernel, so the malt holds its aroma for months rather than weeks, and you crack it the morning you brew.
This is the side of the shop for people with a mill. Base malts come in sacks, including Signature Ale Malt 25 kg and Pilsner Signature Malt 25 kg from Joe White, with Weyermann Pilsner Premium, Vienna and wheat pale malt out of Germany. Specialty grains sit alongside them: chocolate malt, crystal, crystal dark, cara malt and roasted barley, all uncracked. Distillers will want the Devils Pilsner distiller malt. Adjuncts from Blue Lake Milling round it out with rolled wheat, rolled oats in 2kg and flaked Australian rice, and rice hulls are there to stop a wheat or oat heavy mash setting like concrete.
Choose uncracked if you brew often enough to turn over a sack, if you want to set your own crush, or if you are chasing better efficiency and clearer runoff than a generic pre crush gives you. If you only brew a few times a year, our cracked malt grains in 100g lots will suit you better.
Store a sack up off the concrete and out of the sun and it will keep well past the next season.

Chocolate Malt is a lightly roasted product with subtle notes of coffee, cocoa and chocolate and a rich brown colour. Similar in colour to the roasted barley, the roasted malts include the Chocolate, Brown and Black Malts.
Roasted malts are made from pale malts that have already been through the complete malting process of steeping, germination and kilning. Consequently they impart a lightly smoother flavour than roasted barley. Chocolate malt has a colour typically in the range 600 – 800° EBC.
