Fennel seeds have a warm aroma and sweet, anise-like flavour, often used in Italian cooking. Fennel seeds can be ground but they can also be roasted or eaten whole. When roasted they reveal a delicate, almost hidden sweetness. Fennel pairs beautifully with the robust flavours found in cured meats and rich, oily fish like mackerel, sardines, herring and salmon. Roman soldiers are said to have consumed fennel to empower them on the battlefield.

This Merlot mother of vinegar is a thin film of slimy, gelatinous bacteria that encourages fermentation.

If you’ve bought a bottle of raw apple cider vinegar, you’ve probably seen a leftover mother floating in the bottom of the jar. This bacteria has the more scientific name of mycoderma aceti but calling it a mother is so much more poetic.
The magical thing about mothers is that during the fermentation process they give “birth” to other mothers that can be used in future batches of vinegar. People who regularly make their own vinegar can use new generations of one mother to make vinegar for decades.

Other than a mixture of wine, water and a mother, the only other supplies you’ll need are a 1-2 gallon vessel to ferment the vinegar and some cheesecloth. A ceramic crock works well because it keeps out damaging light, but a jar wrapped with cloth or paper to keep out the light could work, too. Covering the top of the vessel with cheesecloth keeps insects out, but lets air get in to feed the bacteria. Tucked away in a warm, dark place, the magical transformation into tasty red wine vinegar will begin. Months later, you’ll be rewarded and we think you’ll agree, it’s worth the wait.

Dextrose brewing sugar, also referred to as corn sugar, is a naturally occurring form of glucose. Use dextrose instead of white sugar in either your fermentation or priming your beer when bottling.

Dextrose improves the quality of beer when compared to ordinary cane sugars. It is fully fermentable and leaves a fresh, clean flavour.

Dextrose is the preferred brewing sugar as it ferments all alcohol content with a neutral flavour allowing the malt flavour to taste more prominent. For more flavour and body, alternatively use dried malts.

DIAM, our technological cork for still wines and it is the only cork closure that provides both a perfect homogeneity between one bottle and another and perfect control over the different levels of permeability. The DIAMANT® method also provides incomparable sensorial neutrality.

The reference #1 corks are the traditional bottle closure for wine intended for long term maturation and storage. A silicone coating on the cork reduces the drag when it slides through the corker. Newly purchased corks in an unopened pack do not require sterilization. To soften the corks for easier insertion by manual corkers, only then place in a colander over a bucket and allow boiled water vapour to rise up through the corks for a few minutes before using.

No 2 - 1 to 3+ years
No 5 - 1 to 5+ years

Tested and approved by many international laboratories, Diam is an innovative closure that combines the tradition of a cork stopper and the mechanical and organoleptic security of a technological closure:

• TCA taint-free (below the limit of quantification of 0.3 ng/l) and many other molecules responsible for sensorial deviations.
• Optimum bottling line (insertion) performance and unsurpassed elastic recovery.
• Prevents leakage, seepage or dust risk.
