Smoking Chips & Pellets

Home > Smoking Chips & Pellets

Smoke is a seasoning, and the wood does as much for a brisket or a side of trout as the rub does. Get the wood right and you taste it in every bite. Get it wrong and it sits over the top of the meat like an ashtray.

The Misty Gully 3L bags are the easy way in, and the range covers most of what you would want. Apple, cherry and peach are the gentle fruit woods, kind to pork, chicken and fish. Maple sits somewhere in the middle. Hickory and mesquite are the loud ones, best kept for beef and for shorter cooks unless you like it heavy. Mountain Ash is the local option, and the wine barrel shavings bring something a bit different again. If you are cooking long and want to keep feeding the fire, the hickory oversize chips and chunks come in a 6 to 7 kg bag rather than a 3 litre one. Lumber Jack smoking pellets suit pellet grills and come in a few sizes. For a cold smoker or a smoking gun, the cherry sawdust in 150g and the American oak powder chips burn finer and slower.

Worth knowing. Soaking chips is mostly a myth. Wet wood steams before it smokes, so it just delays things. Use dry wood and less of it.

Come and smell the bags at Laverton North or Epping. See also meat smokers, BBQ and smoking and jerky cures and rubs.

Lumber Jack

Smoking pellets - Lumber Jack (Select Size)

From $8.50 AUD

Unit price

Lumber Jack smoking wood pellets are the most common and highest quality BBQ pellets in the United States, designed for Pellet Grills. Lumber Jack wood pellets bags are distributed across Australia by us, and we're proud of it.
Blend of Hickory Lumber Jack pellets go well with beef, pork, poultry, and game birds. The blend consists of 60% Red Oak and 40% Hickory, resulting in a perfectly balanced smoke flavour.

“The highest quality BBQ Pellets available”
Why is Lumber Jack so well-known?
It's that easy! The Metabolites or cambium layer of a growing tree determines the flavour of the tree. This ensures that all BBQ pellets made from leftover sawdust are mostly made up of the central kiln dried wood.

For example, sawdust from a hickory furniture or hammer handle factory is flavourless or has very little carryover from cambium layer growth. For the same reason, when the old timers smoked meat and fish, they did not remove the bark from the wood they gathered.
We are a round log farm, which means we harvest real trees and chip them up into green chips with plenty of flavour to make our BBQ pellets.
Don’t get confused
When we say we de-bark the red oak base material in our blends, we mean exactly what we say. We leave the bark on the primary wood but extract it from the oak wood when we produce because the smoke taste you're looking for and expecting is in the bark.
We do this so that the primary wood, such as Hickory in the Hickory blend or Apple in the Apple blend, can express its full rich flavour. As a result, we can have the most intense flavour in our blends! Blends often produce less ash when burned because they contain less bark than our 100% varieties, which are not debarked and therefore produce a more strong and intense taste.

Made in USA

American Oak Powder Chips

From $4.90 AUD

Up to -18%

Unit price

The advantage of using Oak Powder is obviously the 'convenience'. It is easier to use than both an oak wine barrel or Oak Chips. You can use oak powder during fermentation. Oak wood can affect a wine in a lot of ways--mostly good. If the right amount of oak powder is added the major benefits to your wine will be as follows:

Improved stability in the wine's clarity and color.
A reduction or softening of the harsher characters that are commonly associated with younger wines.
And, the addition of wood flavors that give an overall smoother and deeper texture to the wine.
