Testing is how you stop guessing. Once a ferment is running, the two numbers that tell you the most are pH and acidity, and both are cheap to measure next to the cost of tipping out a batch that went sideways on you.
Most of what sits here is the gear for taking those readings. For pH there is the Kegland PH Meter BD pen at 0.01 resolution, plus papers if you would rather not own a probe, so Ph Paper 100 pk across 0 to 14, Ph test Paper 3.8 to 5.4, and the PEHANON papers from Germany in 2.8 to 4.6 and 5.2 to 6.8 for wine and cider ranges. Meters need looking after, so Buffer PH 4.01 Red and Buffer PH 7.01 Green for calibration, KCI 3 Mol/L storage solution and pH Probe Cleaning Solution sit alongside them, with replacement probes for the BD series and the sx620 pocket meter. For acid, the Accuvin test kits from the USA come in ten packs, one for Malic Acid determination and one for TA titratable acidity in cider. There is also an Enartis Wine Fermentation Starter Kit with yeast included.
Calibrate before each session, not each month. It takes two minutes, and an uncalibrated meter is worse than no meter because you will believe what it tells you.
