Oak Chips, Staves and planks
Not everyone has room for a barrel, and not every wine or spirit wants one. Oak in a bag or on a plank gives you the same job in a smaller package. You are after two things from it, the flavour and the slow structure that oak brings, without waiting three years or buying a hogshead.
Start with the origin. French oak is the finer of the two, more spice and restraint, and we carry it as chips and staves, as long block inserts where you choose the toasting level, and as tank planks in medium toast. American oak is bolder and sweeter, with more of that coconut and vanilla character, and comes as chips and staves, long block inserts, medium toast tank planks, and a powder chip for fast extraction. Contact time is the other lever, since chips and powder work in weeks while staves, blocks and planks take months. To keep the mess down, the nylon and Mercier woven synthetic infusion bags hold everything together so you are not fishing chips out at racking. If you want the oak character without wood in the tank, the Enartis tannins do it in solution, including Superoak and the 40 gram premium fruit and oak maturation blend.
Taste weekly and pull the oak early. You cannot take it back out. Talk it through with us at Laverton North or Epping. See also oak barrels, oak tannins and wine making.

French Oak Chips & Staves offer a natural way to enhance the flavor and aroma of your beverages. Ideal for winemaking, brewing, or distilling, these oak pieces impart rich, complex notes of vanilla, spice, and toasted wood. Easy to use and cost-effective, they provide the traditional oak aging experience without the need for barrels, allowing you to customize the intensity and character of your drink. Perfect for artisans seeking authentic oak influence in their craft.
Using Toasted Oak Chips has the advantages of convenience and cost. You simply add them to the wine after the fermentation has completed and has had time to clear away from the settling.
There is a distinction that can be made between American oak and French oaks. American oaks tend to do better with medium to lighter toastings and have a character that leans towards coconut, whereas French oaks are more vanilla to Carmel in character.

These are used bags. They arrived as packaging for our oak chips. Now they are available for sale as used bags.
Use these food-grade Nylon Immersion bags for soaking oak chips in wine tanks (stainless steel, concrete, plastic, etc.). Each nylon immersion bag can be used for either French or American Oak Chips.
*** Please note that they vary from the photo as some of them has residual oak chips and loose string part ***
The measurements for these bags might vary as they are "ex - packaging", which means they had been already open. And sometimes they lost the top part (string) during that part of the process.
Approx. measurements 86 cm length by 47 cm wide
The advantage of using Oak Powder is obviously the 'convenience'. It is easier to use than both an oak wine barrel or Oak Chips. You can use oak powder during fermentation. Oak wood can affect a wine in a lot of ways--mostly good. If the right amount of oak powder is added the major benefits to your wine will be as follows:
- Improved stability in the wine's clarity and color.
- A reduction or softening of the harsher characters that are commonly associated with younger wines.
- And, the addition of wood flavors that give an overall smoother and deeper texture to the wine.

EnartisTan Superoak is a tannin specifically designed for addition during maturation. Its balanced blend of oak and condensed tannins makes it well-suited to improve color stabilization of red wines and is designed to be used during micro-oxygenation.
The sensory profile is characterized by distinct sensations of volume and softness as well as light aromas of toasted oak. EnartisTan Superoak is effective in releasing aromas of wines that have been aged in barrels and to freshen light red and white wines.
Composition: Oak tannin and condensed tannin extracted from exotic species wood.
Dosage:
- White wine: 5 - 10 g/hL (0.4-0.8 lb/1,000 gal)
- Red and rosé wine: 5 - 20 g/hL (0.4-1.7 lb/1,000 gal)
Instructions to use:
Dissolve EnartisTan Superoak at a 1:10 ratio in water or wine while mixing continuously. Add to wine during a pump-over with a dosage pump or Venturi tube.
When used in wine, performing laboratory trials is advised to evaluate the sensory impact of the tannin and determine the best dosage.
While it is recommended to add EnartisTan Superoak during the early stages of wine maturation, it can be added as late as 1-2 weeks prior to bottling. When added close to bottling, it is important to evaluate the effect on filterability and protein and colloidal stability by completing preliminary laboratory trials.
Packages & storing:
- Sealed package: store in a cool, dry, well-ventilated area.
- Opened package: carefully reseal and store as indicated above.
Applications:
- During fining
- Prevent iron and copper haze
- Improve protein stability of white and rosé wines
- Improve color stability of red and rosé wines during micro-oxygenation and during the early stages of aging
- Increase antioxidant protection
- Improve aromatic cleanliness
