The 3-Piece airlock is the best choice for the primary fermenter, since it comes apart for easy cleaning in the event of a blow-off. Fill to the line with boiled water or sanitiser to create a closed fermenting system that allows CO2 to escape, but does not allow air back in to contaminate your beer or wine.
