Whiskey & Bourbon Essences

Whiskey flavouring turns a plain neutral spirit into something with the colour and character of a Scotch, a bourbon or an Irish style whiskey. We keep a wide range on the shelf, so there is room to try a few and find the one you come back to.

Still Spirits. The Top Shelf range covers Single Whiskey, Classic Whiskey, Northern Whiskey, Finest Reserve, Rye Whiskey, Kentucky and Tennessee Bourbon, plus spiced and honey whiskey liqueurs. Profiles works differently: base flavourings A to D and single notes such as Peat Smoke, Sweet Vanillin, Mellow Oak and Fruity Esters, which you combine to build a whiskey of your own.

Samuel Willards. Gold Star essences in 50 ml bottles cover Scotch, Single Malt, Rye and Shamrock whisky, and Kentucky, Tennessee, Big Cat and Wild Duck bourbons. There are Premium and Smooth versions too, and ready mixed premixes when you want it done the same day.

Prestige and Pure Distilling. Prestige essences include Black Label Scotch, Blended Scotch, Tennessee Sour Mash and Canadian Classic. Pure Distilling has a Scotch Whisky essence and a Honey Bourbon.

You do not need a still to use them. Blend with a plain vodka from the bottle shop at the rate on the label, then give it a week or two to settle. For the oak side of whiskey, add oak chips or staves or Samuel Willards whisky soakers.

Read blending spirits and liqueurs and ageing spirits with oak, or browse all essences, rum essences and spirit bottles. In store at Laverton North and Epping.

Frequently asked questions

How do I use a whiskey essence?

Add the essence to a neutral spirit, such as a plain vodka from the bottle shop, at the rate on the label. Shake it well, then let it rest. Most essences taste sharp on day one and settle over a week or two. Our guide to blending spirits and liqueurs has more.

What is the difference between Scotch and bourbon essences?

Scotch style essences lean towards malt, and some add smoke or peat. Bourbon style essences are sweeter, with vanilla and caramel notes. Each listing describes its own flavour, so read a few before you choose.

What is the Still Spirits Profiles range?

Profiles are whiskey flavourings you combine to build your own whiskey. Profile A to D are base flavourings, and the others, such as Peat Smoke, Sweet Vanillin, Mellow Oak and Fruity Esters, add one character each. Start with small test blends and write down what you used, so you can repeat the one you like.

Can I add oak to a flavoured whiskey?

Yes. Oak chips, staves or Samuel Willards whisky and bourbon soakers add colour and woody depth. Taste every few days and take the oak out once it is where you want it. See ageing spirits with oak.
