A tap is the last thing your beer touches, so it is worth getting right. What you need depends mostly on where it is mounted: on a fermenter, on a keg, through a fridge door, or on a font sitting on the bench.
For fermenters, the white plastic tap 19 mm is the standard replacement, and Ferrari make a 19 mm plastic tap with a 16 mm outlet and red handle as well as one with an 8 mm outlet. On kegs and fridges, the Intertap stainless steel tap with handle is the common choice, the Intertap with flow master control lets you slow a fast pour, and the NukaTap SS Punisher Edition pairs a black body with a stainless spout. If the tap goes through a fridge door, add the stainless steel 100 mm extension shank so it clears the door, or mount a stainless steel font tower on the bench instead. Disconnects and fittings live here too: the premium keg gas disconnect MFL with an integrated check valve, the Duotight 8 mm ball lock disconnect in black and yellow for liquid, the NukaTap Mini FC disconnect kit, an Algor ball valve tap and a 38 mm triclover stainless elbow.
The tip: pull the tap apart and soak it every few kegs. Most taps that pour foam are not a gas problem at all, they are a sticky tap.
