Rolled dough wants to be cut cleanly and handled as little as possible. Every extra pass with warm hands softens the fat, and soft dough tears instead of cutting. The tools here are the ones that give you a straight edge or a fluted one in a single stroke, plus the machines a lot of people end up using for the same job.

For cutting, the Incasa plastic pastry cutter gives a straight 15 mm edge, and the Panetta Casalinghi pasta cutter roller pin comes with four interchangeable rollers, so one handle covers plain and fluted strips at different widths. The Incasa pizza and pastry roller docker puts an even line of spikes through a base so it does not balloon in the oven, and the tortellini rolling cutter is a 38 mm two blade tagliapasta with a wood handle.
