Baking oven trays

A tray is one of those things you only think about when the wrong one is in the oven. Thin trays buckle, the wrong shape wastes half the deck, and a base that does not breathe leaves you with a pale, soggy bottom.

Most of what we stock here is aluminium, because it heats fast and evenly and it does not weigh a tonne. Ken Hands make the workhorses: the plain aluminium baking tray, the version with a recessed handle, the Bakewell, the gastronorm tray for anyone running a standard oven rack or a commercial fridge, and a baking sheet with a 20mm lip. If you want shape rather than a rectangle, there is the round Borek style tray and the square Tare style. For pizza there are round aluminium trays both spun and pressed, a perforated 32cm and a 34cm perforated base by Vespa, plus the Guardini set of four trays with a rack. There is also a non stick stainless steel tray and a deeper oven roasting pan for a Sunday leg of lamb.

The tip from behind the counter: perforated bases are for pizza and flatbread where you want steam to escape and the base to crisp, and solid bases are for anything with a wet batter or a bit of fat to hold. Buying one of each covers most weekends.
