Mincer Knives and Plates
The plate and the knife are the two parts of a mincer that actually cut. Everything else just pushes meat towards them. When mince starts coming out smeared and warm rather than in clean strands, it is almost always because the pair has gone dull, or because they are not sitting flat against each other.
Plates are sized by the mincer body they fit, so match the number first. We stock Salvinox Italian stainless plates in No 8, No 10/12, No 22 and No 32, plus No 22 and No 32 versions with a hub. Raut make stainless plates in No 8, No 10/12 and No 22. Fabio Leonardi carbon plates come in No 32 and No 5. On knives, Salvinox do a quad blade, a No 22 curved box knife and a No 32 wave cut box knife, and Raut make a stainless mincer knife. Stainless holds up better against salt and washing. Carbon takes a keener edge but wants drying and oiling after every use.
Here is the one that saves people money. Knives and plates wear as a matched pair, so replace them together, keep each set with its own machine, and do not run a new plate against an old knife. Chill your meat and your parts before you start and the whole thing cuts cleaner.
