Imperia
Imperia have been making pasta machines in Turin since 1932, and the 150mm manual machine on this page is essentially the same one your nonna clamped to the kitchen table. Chrome plated steel, no plastic in the rollers, one moving part that matters. It is the reason we still sell them.
Which Imperia pasta machine
The Imperia 150mm manual pasta machine is the household choice and the one most people mean when they ask for an Italian pasta maker. It rolls sheets and cuts two widths out of the box, in chrome or red. Add the Pasta Facile motor when you get tired of turning the handle, which usually happens somewhere around the third batch, and it clamps straight onto the same machine.
The Restaurant R220 is the bigger sibling, 220mm wide instead of 150mm, and it comes three ways: manual, electric at fixed speed, or electric with variable speed. If you are making pasta for twenty people at Christmas rather than four on a Sunday, this is the one. There is also a 1hp motor and frame for commercial use.
For shapes the rollers cannot do, the electric pasta extruder handles 1.5 to 2kg batches on 240 volts, with interchangeable plates for fusilli, reginette and more.
Attachments and moulds
Attachments are sized to the machine, so check whether you have a 150 or a 220 before ordering. For the 150mm: spaghetti 2mm round, trenette linguine 3mm, reginette 12mm ribbed edge, the Duplex twin that cuts tagliatelle and fettuccine together, and ravioli attachments in single and double. For the Restaurant 220mm: angel hair 1.5mm, spaghetti and tagliatelle 2mm, trenette 3 to 4mm, fettuccine 6.5mm, lasagnette and reginette 12mm.
The ravioli moulds are separate and worth having: 36 hole small square, and the 44 hole minestra mould for the little ones that go in soup.
Spare parts, because these last
We stock the replacement clamp, the handle for the 220 series, the three piece plastic gear set, the drive box for the electric restaurant model, the motor drive shaft and the blue plastic guide bracket. A forty year old Imperia is a normal thing to see on our counter, and it usually needs one small part rather than a new machine. Bring it in.
If you are after cavatelli and gnocchetti instead, the Big Mamma and Little Mama makers do that shape properly.
