Every batch needs somewhere to sit while it works. Beer, wine, olives, a molasses wash or a curing brine, the job is the same: food grade plastic, a lid you can trust, and enough room that it does not climb out the top on day two.

Sizing is the first decision. The 30 Lt brewing fermenter with a screw lid and the Handcraft Supplies 30 Lt suit a standard batch. The 60 Lt drum with a clear screw lid is for bigger brews, or for anything you want to see into without opening. SSS Plastic make the Italian food grade vat with handles and the Italian plastic fermenter barrel, which are what most people use for olives, sauce and grape must. For pressure work, the Keg King Apollo 30 L conical comes as a kit with a yeast dump valve, the Apollo 30 L Snub Nose is the shorter one for tight fridges, and the Fermentasaurus conical PET 35 L starter kit lets you watch the yeast drop out. Spare lids with no hole, the Morgans 30 W rigid shell heat pad and the 20 Lt olive curing pail with its inner grate are all here too.

Worth knowing: leave real headspace, a quarter of the vessel at least. Cleaning krausen off the ceiling is a job nobody enjoys twice.

The Fermentasaurus has been designed with a sanitary butterfly valve with stainless gate. This butterfly valve has been designed so that no threads are immersed in liquid when the Fermentasaurus is in use. Many fermenters on the market use ball valves which are notoriously difficult to sanitise as the ball valve assemblies have small cavities in them that fill with liquid and are near impossible to clean without disassembly.

With the optional pressure kit you can presurise the vessel up to 35psi to allow you to carbonate and dispense direclty from vessel like a keg! Alternativley you can transfer under pressure to stainless kegs with practically no exposure to oxygen.
