Temperature Control

Guessing at temperature is where most projects come unstuck. A pizza oven that feels hot enough is often a couple of hundred degrees short, and a curing space that feels about right can be far too damp. A gauge takes the argument out of it and tells you what is actually happening.

What we keep here covers two jobs. For heat, the 30 cm Pizza Oven Thermometer sits in the oven and reads the air, and the 3 inch Thermometer Gauge for Wood Fire mounts into the door or dome of a wood fired oven so you can read it from outside. The Kegland oven thermometer with probe reads 50 to 300 C in stainless steel and suits anyone who wants a probe into the food rather than the air. For humidity, the TFA ThermoHygrometer Analogue reads 0 to 100 per cent and is the simple dial that never needs batteries, while the ThermoHygrometer H560 adds a digital dew point reading for people who want the detail.

One thing worth doing is putting the gauge where the food is, not where it is convenient to read. Air near a door or a heat source will tell you a story that has nothing to do with what your pizza base or your salami is actually experiencing.

Come in to Laverton North or Epping, or see cooking thermometers, hygrometers and testing and thermometers and controllers.
