Brewing Temperature Control
Fermentation temperature shapes the flavour of a beer more than most brewers expect. Yeast left too warm throws hot, solventy notes that no amount of conditioning will hide, and yeast that gets cold through a Melbourne winter can stall halfway and leave you with a sweet, under attenuated batch. Holding a steady number for a week is the cheapest improvement most home brewers can make.
There are two jobs here and they are not the same. If your fermenter sits somewhere that runs cold, a Glass Immersible Heater is what you want, sitting in a water bath to lift the temperature and hold it there. If you would rather the sensing and the switching happened for you, the MKII Temperature Controller with 4mm Probe from Kegland takes the reading and cuts power to a heater or a fridge so the ferment stays where you set it.
One thing worth doing. Tape the probe to the side of the fermenter and cover it with a scrap of foam rather than leaving it dangling in the air. Active yeast makes its own heat, so the wort can sit several degrees above the room. Measure the beer, not the air around it.
