Baesso presses are traditional hand-operated cylindrical presses. Presses are produced by a company with centenary history; that means experience and skills handed down through many generations. This type of press with its long-lasting history is very popular among customers

Presses are produced of high-quality materials: the cage is made of the beechwood, the pressing plate and removable tray are constructed in stainless steel.

A composite bush roller support with an 18 mm internal diameter, for the Fratelli Baesso crusher destemmer. Bushes are a consumable. They wear oval, the roller starts to wobble and the machine gets noisy long before anything actually fails. Cheap enough to keep spares of. Internal diameter is the fit, so if yours is not 18 mm, send us the machine model and serial number, or bring it into Laverton North or Epping.

The gear we’d put together for anyone making their first red. Everything here is something we sell on its own and use ourselves, bundled so you’re not standing in the aisle wondering what you’ve forgotten.
A 20 L batch fills around 24 to 26 standard 750 ml bottles once the wine is racked off its sediment. That’s enough to learn the process without committing a whole garage to it.
Not included
- Grapes or juice
- Wine bottles. See our wine bottles.
- A bucket or vat, if you’re crushing whole grapes
How it works
- Clean and sanitise the demijohn, airlock and syphon with a metabisulphite solution.
- Fill and pitch. Add your juice or crushed grapes, plus nutrient and yeast following the directions on each pack. Take a hydrometer reading before fermentation starts.
- Ferment with the airlock fitted. Keep the demijohn somewhere with a steady temperature.
- Check it’s finished. When the hydrometer reading stops changing over a few days, fermentation is done.
- Rack the wine off the sediment with the syphon, and let it clear. Don’t rush this. Wine bottled too early tastes thin.
- Bottle and cork. Fill your bottles, drive the corks home with the hand corker, and give it time.
New to it? Read our step-by-step wine making guide, or pop into Laverton North or Epping and we’ll walk you through it.

- A crusher and press, if you’re starting from whole grapes.
How it works
- Clean and sanitise the demijohn, airlock and syphon with a metabisulphite solution.
- Fill and pitch. For white wine, the grapes are crushed and pressed first, so only the juice goes into the demijohn. Add the nutrient and yeast following the directions on each pack. Take a hydrometer reading before fermentation starts.
- Ferment with the airlock fitted. Keep the demijohn somewhere cool with a steady temperature.
- Check it’s finished. When the hydrometer reading stops changing over a few days, fermentation is done.

Grifo crusher destemmer roller supports in black plastic. These carry the rollers in the crushing section, and worn supports let the rollers sit out of true.
The title on this listing is incomplete: it gives no quantity and no internal diameter, just ID mm with the figure missing. Please ask us for the full spec and confirm the bore against your machine before you order.
Micro granulated blend of gallic, ellagic and condensed tannins. When added at grape reception, during cold soak or in the first stage of maceration, it protects color and aromatic compounds from oxidation thus increasing wine color and aroma potential. Additionally, EnartisTan Rouge reinforces the structure of the wine and imparts balance. Recommended in case of moldy grapes.
Applications: “sacrificial” tannin; anti-oxidant protection; color stabilization
- Promote protein and color stabilization
- As a fining agent in combination with gelatin or plant proteins
Dosage:
Must: 100 – 200 g/ton (150 – 400 g/ton for moldy grapes) Wine: 5 - 15 g/hL
INSTRUCTIONS FOR USE
Dissolve EnartisTan Rouge at a 1:10 ratio in water, wine or must while continuously mixing. Add to the mass during pump-over with a dosage pump or Venturi tube. Performing laboratory trials is recommended to evaluate the sensory impact of the tannin and in order to determine the best dosage.
While it is recommended to add EnartisTan Rouge during the early stages of wine maturation, it can be added as late as 1-2 weeks prior to bottling. When added close to bottling, it is important to evaluate the effect on filterability and protein and colloidal stability by completing preliminary laboratory trials.
PACKAGING AND STORAGE CONDITIONS
Sealed package: store in a cool, dry, well-ventilated area. Opened package: carefully reseal and store as indicated above.
A grape must drain screen made in Italy, 1100mm long and 200mm in diameter, with perforated holes and handles at each end. It is a customised fitting rather than an off the shelf part, built for draining must during vintage.
Because it is made to size, check the dimensions against your vat or press before ordering and we will talk it through.

A set of two half moon pressing blocks for a 35cm basket press. They sit on top of the cake and spread the load from the plate evenly across it.

A stainless steel support stand kit for a crusher destemmer, made by Fratelli Baesso in Italy. The stand lifts the machine to a working height and holds it steady, which matters a great deal when you are feeding bins of fruit through it and the whole thing wants to walk across the shed floor. Stainless is the right material for anything that spends vintage covered in juice and then gets hosed down afterwards. This is bought by people who already have the crusher destemmer and want the job to be less of a wrestle next season. Have a look at one set up at Laverton North or Epping.
A replacement 50 cm wood basket with BE rings for the Baesso press. The largest of the three Baesso basket sizes we list, so make sure 50 cm is genuinely what you need before ordering. Wood baskets are a long term consumable rather than a permanent fitting. Send us your press model and serial number and we will confirm the diameter, or bring the old basket into Laverton North or Epping.
This press has a tilting frame that provides convenient access to the basket for filling it with crushed fruit. To tilt the frame, it is necessary to unscrew its fastenings. After that put a filter bag inside of the press basket and fill it with crushed fruit.
The filter bag will hold the crushed fruit inside of the basket and filters the juice from the pulp. When filter bag is used while pressing, there is no need to filter the juice afterwards. When the filter bag is filled, the edges of the bag are turned on top of each other so that they overlap and do not let the crushed mass to come out from the bag.
To start pressing, the frame fastenings need to be tightened again. After that the press handles need to be rotated until the press comes in contact with the filter bag inside of the basket. The pressure of the press should be raised slowly with the handle of the press rotated slowly and not immediately at full speed. Otherwise the juice can not flow out from the pulp and the juice yield from the mass will be lower.
The groove below the basket of the press is made of stainless steel and it collects all the juice that flows out from the crushed fruit. It is necessary to place a collecting vessel or a bucket underneath the groove, where the juice is collected in the end of the pressing process.
We recommend that you disassemble the press after the use and rinse it with water from the hose.
